We had nutritious and delicious food at Naad Wellness for three days consecutively with five meals on each day. Every time the food was amazing with a different taste while ensuring that we have the required amount of calories along with the specific nutrients as per our course of treatment. Since both of us are overweight, we were on a food that provided requisite calories.
So, we used to have dishes like Beans ki Bhaji, Mixed vegetables with mustard, Ragi ki roti, Jaun ka halwa, Quinoa Upma with coconut milk, Palak and triple smoothie, Millet fruit porridge, mixed vegetables cutlets, cucumber ginger and mint juice, palak soup and the list is endless.

In my other post I have posted even more pictures of food items. We were curious to know the secret behind the taste and also the uniqueness in dishes. So, we had an interaction with the Chef Sahajan.
What is the secret behind this nutritious and delicious food? How do you ensure taste and nutrition together?
He told us about that 60% of the food that we have are from their own farms. Out of which 80% is organic. He said that the spices that we source are hand picked and even the oils that we use are of premium quality. Raw material of premium quality for oils is bought and taken in the mill and is cold pressed. Oils are extracted by us in our trusted mills. Fresh vegetables and herbs are used which provide the required taste, flavour and texture. When menu is planned, these things are hand picked from our farms.
What oil is being used for cooking?
Sesame, coconut cooking oil or olive oil, mustard oil and ghee.
There must be some combinations that compliment each other in a big way. How do you do that?
We first know that the guest is from which region. Then we try to play with tastes of that region along with the required nutrition and add taste based on our experience. We know from doctors what not to give and what to specially give. So, we have to prepare dishes accordingly.
Do you keep trying new dishes?
Yes of course, everything has to be customized as per guest. We have to ensure caloric value along with nutrition. Each guest has their own individual requirements. Team is instructed a night before and assigned roles.
What are the nutritious things that we must add in our diets.
Brown rice, bamboo rice, Millet, Ragi, jowar, Bajra, foxtail Millet, finger, little Millete. You can make smoothies with coconut milk , nuts, almond milk, honey, jaggery, fruit, rajgira- puffed amaranth seeds, sprouts etc.
